Creamy Chicken with Spinach and Mushroom Risotto
Serves 4

Ingredients
  1. 2 tablespoons olive oil
  2. 4 boneless, skinless chicken breast
  3. 2 tablespoons chopped shallots
  4. 1 c sliced fresh mushrooms
  5. 1 c chopped fresh spinach
  6. 1 9.9 oz package minute risotto
  7. 1/4 c chicken broth
  8. 1/4 c grated Asiago cheese
  9. toasted focaccia bread, for serving
Instructions
  1. Preheat oven to 350º F
  2. Heat olive oil in a sauté pan over medium-high heat. Add chicken and brown on both sides. Transfer to a baking tray and bake in the oven for 15-18 minutes, or until the internal temperature is 170º F.
  3. Add shallots, mushrooms and spinach to the sauté pan and cook until wilted. Add risotto rice and mix in. Add broth and cook until rice is tender.
  4. Slice the chicken into bite-sized pieces and add to the risotto. Add cheese and stir until it is melted. Serve with focaccia.
Notes
  1. Tip: Don't wash the sauté pan before putting the other ingredients in to cook. Use the juices and olive oil from the chicken to add more flavor.
